Gingerbread Pancakes

My sister in law asked for this recipe and it seems to be the rule you can't post a recipe without a picture so here goes. This is my family traditional Christmas breakfast of gingerbread pancakes that we top with whipped cream and apple syrup.
Gingerbread Pancakes
separate 2 eggs. Whip eggs whites until peaks form when you lift out the mixer
stir together in a bowl-
1 1/4 c buttermilk
2 T melted and cooled butter
1/2 c molasses
2 eggs yolks
stir together in another bowl-
1 1/2 c flour
1 T brown sugar
1 t baking powder
1/2 t baking soda
1/2 t salt
1/2 t cinnamon
1/2 t ginger
Gently combine ingredients from both bowls just until combined, then fold in egg whites to keep it all fluffy and light. Cook as regular pancakes. Top with whipped cream and Apple Syrup.
Apple Syrup
1 c sugar
2 T cornstarch
1/4 t cinnamon
mix above ingredients in saucepan, then add
2 c apple juice
1 T lemon juice
heat to boiling, boil 1 minute then remove from heat and add
1/4 c butter

Halloween Pictures

The boys were robots for Halloween. They both wore their costumes for all of trick-or-treating which was great. My mom gave me the idea to make them out of foam glued together and Dave had the idea to cover them with aluminum tape-and I did all the work! Grant would say "trick treat" at every door and Ryan would say "trick or treat" in his best robot voice.

Excited for Winter

I'm excited for winter because maybe a little cold weather will encourage Grant to keep his clothes on. (bytheway, this is Grant's bum-in-the-air sleeping position- since the day he could roll over)

Logan

Dave's Mom came and watched the kids for a couple days so Dave and I could go to Logan. We had a hard time deciding what to do for our 5th anniversary and procrastinated planning or went as a family everyplace we had thought about going alone. So finally we got a free weekend and decided to try out Logan. We went to see the fall colors in the canyon. I think we were probably a little early because there was still a lot of trees that hadn't changed- but it was beautiful nonetheless. We spent one day just driving through Logan Canyon, stopping along the way for some little hikes, and ended up at Bear Lake. It was so nice to be with Dave and free from responsibilities for 48 hours. The funniest part was all the other people we saw the whole day were retired folks. We definitely need to plan on going back in 40 years so we can blend in a little better. We kept busy trying to make the most of our time. We saw Harry Potter, ate at the Bluebird Cafe, went to the Logan temple and got some Aggie ice cream. We also drove past my Mom's and Dad's childhood homes which was fun to show Dave. We made it home safe and sound and are so grateful the kids had a great time with Dave's mom. I love Dave so much. We get along so well I think I'm not as understanding about our few differences as I should be. I'm grateful to read all my friends blogs and how uplifting everyone is with their spouses, how similar Dads are to each other and different from the way a mom would do it. I guess in conclusion I love Dave and blogs. One a little more than the other.
